I found this recipe about 10 years ago when I was waiting out a tropical storm in Florida. I had a serious cupcake obsession at the time. My then-boyfriend (now-husband) had challenged me to bake one single cupcake. Of course, I turned to Google and found the perfect recipe. I don't think the website is around anymore (it was called "A Sweet Road") so I can't fully give the original creator credit. (If you know who it is, please let me know!) However, I am posting the recipe here for all to enjoy. If your kids insist on having a bake-off, it really does make the perfect base (and you don't end up with a ton of large cakes at the end).
My team won! We are the champions! Our secret was swapping out the vanilla extract in the icing for lemon extract. It was perfect! The other team also had a good idea and added caramel to the icing. That gave their icing a bit of a slime consistency and sheen (perhaps perfect for Halloween?). Both teams also added food coloring to create purple because it was Baby Sparkles' favorite color. (Baby Sparkles is my daughter's favorite doll.) And we added unicorn and pink sprinkles. Okay, here is the recipe.
One Delicious Vanilla Cupcake

1 tablespoon butter, softened
2 tablespoon sugar
4 tablespoon + 1 1/2 teaspoon milk
1/4 teaspoon vanilla (My daughter says to be careful with this because it's very strong!)
3 tablespoon + 1 1/2 teaspoon flour
1/4 teaspoon baking powder
A dash of salt
Combine the butter and sugar until well incorporated. Add 2 tablespoons of the milk (room temperature or warm). Combine the flour, baking powder, and salt, and then add to the butter mixture. Add the remaining milk and vanilla and mix until incorporated. Bake at 350-375 degrees for 15-20 minutes. Serves 1 (and my husband was very displeased about this fact, ha ha).
Single Serving Frosting

1/4 cup powdered sugar
1 teaspoon pure maple syrup
A few slivers of butter, softened
A tiny splash of milk
A tiny splash of vanilla
Combine the butter, maple syrup, and vanilla. Add the powdered sugar and combine. Add milk for desired consistency. (And swap lemon extract if you want to be a winner!)
